2026 Sparkling Fiano "The Spark"

NEW RELEASE! 

This Fiano was harvested on the 29^th of January 2026 to provide natural acidity in balance with flavour ripeness, optimal for its intended dry sparkling style. It was pressed and fermented in stainless steel tank, before being left on gross lees for three months to develop natural mouth weight and texture. 

Lifted aromas of lychee, and white florals. The palate is full of fresh grapefruit, lime, and luscious pears. Time spent on lees after fermentation has developed a moreish mineral mouthfeel, complemented by fine, lingering acidity that drives the palate and delivers impressive length, freshness, and a supple finish.
